All it takes is some walnuts and cashews or pecans, confectioners' sugar, unsalted butter, pure vanilla extract, flour and cinnamon to whip up a batch of the most scrumptious and decadent holiday cookies.
Pulse your nuts with sugar until finely ground. Add butter and vanilla and pulse until smooth. Add flour, salt, and cinnamon. Roll between parchment paper to 1/4-inch thickness. Chill until firm, 30 minutes or up to 2 days.
Line two baking sheets with parchment paper. Use a festive cookie cutter and place on prepared baking sheets. Bake until lightly golden brown around the edges. After cooling, dust with confectioners’ sugar.
